Fenugreek or Carrots "may it be Your will that our merits increase"
Rosh HaShanah Sauteed Carrots
Ingredients:
2 pounds baby carrots - sliced lengthwise, blanched and drained
1 cup total of the following (mixed as you like)
---currants
---rasins
---unsweetened coconut
---slivered almonds
1 tbsp Olive or Grape Seed Oil
chopped fresh mint leaves (for garnish)
Directions
Saute carrots for 3 to 5 minutes on medium high heat
Add mix and continue cooking until carrots are desired consistancy
Remove from heat, toss with olive or grape seed oil
Garnish with fresh mint if desired and serve hot!
