Beets
Hebrew word for beet (selek) is a pun on another word (saluk) which means "to remove" or "to take away" -- "our enemies will be taken away".

Orange Glazed Beets

Ingredients:

    2 1/2 cups peeled, sliced raw beets
    1 cup orange juice
    1 tablespoon solidified olive oil*
    1 teaspoon salt
    1 teaspoon grated orange peel
*Pour an amount of olive oil into a wide mouth glass jar - a small Mason jar works great - cover and place into refrigerator at least overnight (until firm). Directions:

    1. Peel raw beets; slice thinly.
    2. Arrange slices in a 1 ½ quart lightly greased casserole.
    3. Combine remaining ingredients and pour over sliced beets.
    4. Cover and bake at 350° until tender about 1 hour.
